If I got the time to make my own breakfast in the morning, pancake was always the solution. There is just the fuss-free quality in pancake that impels me to make it over and over again. Then again, having begin to feel bored with the same recipe each morning, I decided to give the usual pancake a twist.
- 2 eggs,
- 2 tbs of all-purpose flour,
- 1 tsp of vanilla extract,
- 1 tbs of milk,
- 10g of butter,melted
- 30g of Cheddar,grated
- 1 banana, sliced into coins
- smooth peanut butter
Separate the yolk and white into two bowls. In the bowl that contains the egg yolks, mix in flour,vanilla,melted butter and milk to a smooth paste. Stir in the cheese. Whisk two egg whites till foamy, then gently fold in the batter.
Ladle the mixture onto a hot non-stick pan, when tiny bubble appear on the edge, flip the pancake over and cook for another 20 seconds.You should get about 4 to 5 small-size pancake.
Final assembly step can’t be simpler enough, just the matter of making sandwich with those pancake. I layered the sliced banana between the peanut butter spreaded pancake, but you could also mash the banana with the peanut butter to make the filling. Yum, a great breakfast guaranteed a perfect day.
